I thought it might be nice to have traditional Mexican soups (corn or tortilla), but the tomato soup served at "Dinner 1" was so good, that I hit the books (Rick Bayless's) in search of Mexican tomato soups. These two sound nice:
Idea #1 - Sopa de Jitomate y Rajas (Roasted Tomato Soup with Poblanos, Oregano and Fresh Cheese). I'll investigate a source for Queso Fresco / Farmer's Cheese. Calls for beef broth, but could still use chicken broth.
Idea #2 - Sopa Ranchera (Rustic Ranch-Style Soup with Tomato, Jalapeño and Avocado). Calls for chicken broth, shredded chicken is optional. Lots of cilantro required.
Your thoughts on these and other soups would be appreciated. I will bring the recipes for these this weekend - so you can consider.
